Ingredients for about 3 portions:
200 g flour
300 ml milk
4 eggs
1 pinch salt
1/2 teaspoon vanilla sugar
Butter for frying
Raisins to taste
Icing sugar for dusting
Apple purée or roast plums
Method:
Mix together the flour, salt and milk to create a thick batter. Then stir in the eggs. Melt the butter in the pan (but do not burn). Add the batter and some raisins if desired, turn down the heat slightly. When the batter is almost cooked, flip over. Then chop into little pieces. Dust with vanilla sugar. Plate up and serve with a dusting of icing sugar. Apple purée and roast plums can be served alongside too.
