Ingredients:
500 g curd cheese
300 g flour
120 g butter
2 eggs
ca. 12 apricots
ca. 12 sugar cubes
Salt, lemon peel, breadcrumbs
Method:
Cream the butter with the lemon peel and a pinch of salt, then gradually add the eggs. Mix the cheese and the flour to create a smooth dough. Let the dough rest. In the meantime, remove the cores from the apricots and insert a sugar cube. Divide the dough into 12 pieces and press flat with floured hands, push the apricots into the dough and shape into dumplings. Simmer the dumplings in slightly salted water for around 15 minutes. In the meantime, fry the breadcrumbs in butter and roll them in the cooked apricot dumpling mix. Dust with icing sugar before serving.
