Sweet yeast dumplings

Ingredients
check30 g yeast
check500 g flour
check120 g butter (warm)
check250 ml milk (lukewarm)
check5 egg yolks
check60 g sugar
check1 pinch of salt
check1 packet of vanilla sugar
check50 g butter (melted, for brushing)
check4 cl oil (for the form)
check160 g apricot jam
Preparation
Mix the yeast, a little bit of sugar, some flour and a dash of the lukewarm milk to a dough. Let it rest in a warm place for approx. 20-30 minutes until the dough is twice its size. Now add the rest of the flour, the lukewarm milk, the egg yolks, the salt, the sugar, the vanilla sugar and the warm butter. Knead it to a dough and let it rest for about 30 minutes. Afterwards you can knead the dough again and again leave it to rest for another 30 minutes – this will help the dough to get softer. Preheat the oven to 180 degrees Celsius. Roll out the dough thinly and cup out circles. Place the apricot jam in the middle and close up the yeast dumplings. Put the dumplings in a buttered oven proofed dish. When you have finished, brush a little butter on top and bake in the oven for 30 minutes.
