Kaiserschmarrn

Delicacies from the Tyrolean mountains

Enjoy a ‘delicacy from the mountains’ every day and conjure up some holiday memories on your table. We have selected seven different favourite dishes for you and hope you enjoy cooking and, above all, savouring them. Good luck!

Ingredients:

  • check5 eggs

  • check180 g flour

  • check350 ml milk

  • check1 pinch of salt

  • check2 tablespoons of sugar

  • check1 lemon

  • check90 g raisins

  • check1 tablespoon of butter

  • checkIcing sugar

Preparation

Separate the eggs. Put the egg whites in a bowl. Stir egg yolks, milk, salt, su-gar and grated lemon rind to a smooth dough, then stir flour and raisins to the mixture. If you like you can also put a little bit of rum in the dough. Beat the egg whites and fold in the mixture. Melt butter in a pan, put the dough in the pan (the temperature should be not too hot, medium heat), wait until the underside turns light brown and tear the dough into small pieces (using two forks) and turn around the pieces – the „Kaiserschmarrn“ is finished when the colour is goldish-brown. Sprinkle icing sugar over the sweat meal.

Tip: It is also possible to prepare the “Kaiserschmarrn“ without raisins.
