Daumnidei with sauerkraut

Ingredients:
check500 g potatoes
check1 egg
check150 g flour
checkSalt
checkPepper
checkNutmeg
checkButter for frying
checkSauerkraut as a garnish
Preparation
Boil the potatoes until soft, peel and press through a potato ricer while still hot. Add the flour, egg, a litt-le salt, pepper and grated nutmeg. Knead everything into a smooth dou-gh with your hands and roll out into a finger-thick sausage on a floured work surface. Now cut off thumbsized pieces with a pastry cutter and fry in a pan with hot clarified butter until golden brown on both sides.
TIP: The Daumnidei taste best with a glass of milk.
