Chees dumplings
Delicacies from the Tyrolean mountains

Ingredients:
check250 g dumpling bread or stale bread rolls
check50 g butter
checkapprox. 1/4 l hot milk
check3 eggs
check250 g grated cheese (Tilsiter, mountain cheese, grey cheese)
checkParsley
checkSalt
check1 onion
checkOil or clarified butter for frying
checkChives (for soup)
Preparation
Soak the bread cubes in milk, finely dice the peeled onion and cheese, wash and chop the parsley. Fry the onion in the heated butter until translucent and add to the softened bread cubes. Now mix in the finely diced cheese, eggs and chopped parsley. Season the dough with salt. Shape the mixture into dumplings and press them flat. Heat plenty of butter in a pan and fry the dumplings over a me-dium heat until golden brown on both sides. Serve the cheese dumplings with hot beef soup and chives and/or salad.
