Barley broth

Delicacies from the Tyrolean mountains

Enjoy a ‘delicacy from the mountains’ every day and conjure up some holiday memories on your table. We have selected seven different favourite dishes for you and hope you enjoy cooking and, above all, savouring them. Good luck!

Ingredients:

  • check80 g barley

  • check150 g bacon

  • check200 g smoked pork meat

  • check1 l water

  • check1/2 liter meat soup

  • check2 small onions

  • check2 carrots

  • check1/2 parsley root

  • check150 g celery

  • check1-2 potatoes

  • check1 leek

  • checkSalt

  • checkPepper

  • checkNutmeg

  • check2 table spoons flour

  • check2 table spoons cream

Preparation

Wash the barley. Dice the bacon and sauté it together with the barley. Ad the smoked pork meat and pour over the water and the meat soup. Peel and dice the onions, carrots, parsley roots, celery and potatoes. Cut the leek into fine rings. Now add the vegetables to the broth and season. Simmer for about one hour. Take out the smoked pork meat and cut into small pieces which you but pack in the soup. Stir flour, some water and the cream until they are smooth and thicken the broth with it.
